    Combine 1 cup bread flour, 2 1/8 cups warm water, and yeast in a large bowl to make a thin batter; let it sit until frothy bubbles form, about 10 minutes.

    Stir in 3 eggs, vegetable oil, honey, and salt until well combined.

    Beat in whole wheat flour and the remaining 2 cups bread flour, alternating the flours by cupfuls, until the dough becomes too stiff to stir in more flour.

    Turn the dough out onto a floured surface; knead until smooth and elastic, about 10 minutes, adding more flour as needed to make a slightly sticky dough.

    Shape the dough into a round; place it in a large, lightly oiled bowl and turn it a few times to coat the surface with oil.

    Cover the bowl with a plastic bag and let it rise in a warm, draft-free spot until doubled in size, 1 to 2 hours.
