    Place the mango, apples, sugar, vinegar, ginger, sea salt, paprika, chili flakes, cinnamon, cardamom, cloves, pepper, and bay leaf in a multi-functional pressure cooker (such as an Instant Pot). Close and lock the lid. Choose high pressure as directed by the manufacturer and set the timer for 12 minutes. Allow 10 to 15 minutes for the pressure to build.

    Carefully release the pressure using the slow-release method per the manufacturer's instructions, about 10 minutes. Then release any remaining pressure with the quick-release method, about 5 minutes. Unlock and remove the lid. Switch to the Saute function and cook until the chutney thickens, about 10 minutes.

    Cool completely before storing in sterilized jars.
