Tropical Baked Yams
Tropical Baked Yams bring together tender, caramel-kissed cubes of yam with bright pineapple–orange notes and a buttery brown sugar glaze. Put the yams in a large pot and cover them with salted water. Bring to a boil, then lower the heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and let them steam dry for a minute or two.

Preheat the oven to 325 degrees F (165 degrees C).

Return the yams to the pot and mash with the juice until smooth. Pack the mashed yams into a 3 quart casserole dish, dot with butter, and sprinkle with brown sugar and nuts. Loosely cover with aluminum foil.
