Preheat the oven to 450 degrees F (230 degrees C). Line a sheet pan with parchment paper and grease an 8x8-inch baking dish.

Arrange the cauliflower pieces on the prepared pan, toss with olive oil, and season with salt and pepper.

Roast in the preheated oven until tender yet still firm, about 20 minutes. Remove from the oven and lower the oven temperature to 350 degrees F (175 degrees C).
