Marylyn's Cheese Blintzes

Marylyn's Cheese Blintzes feature delicate, lacy crepes enveloping a smooth blend of cottage and farmer cheese with a hint of vanilla. Lightly pan-fried until spotty golden, they balance tender texture with a rich, gently sweet filling—perfect for a special breakfast or brunch, and lovely with fresh fruit or a dusting of sugar.

  1. 1

Add the water, milk, eggs, melted butter, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, and flour to a blender, and blend until the batter is smooth, about 1 minute.

  2. 2

Pour the batter into a bowl, and refrigerate for at least 1 hour.

  3. 3

Rinse out the blender container, then add the cottage cheese, farmers cheese, sour cream, sugar, 1 teaspoon of vanilla extract, and 1 pinch of salt.

  4. 4

Pulse the mixture a few times to combine, then blend until the filling is smooth, about 2 minutes.

  5. 5

Melt 1 teaspoon of butter in an 8-inch skillet over medium heat until the foaming stops.

  6. 6

Pour about 2 tablespoons of batter into the hot skillet, and swirl to fully coat the bottom.

  7. 7

Cook until the crepe is opaque and set, 1 to 2 minutes, then place it, uncooked side down, on a plate lined with wax paper.

  8. 8

Repeat with the remaining batter, buttering the pan every few crepes if needed.

  9. 9

To fill, place a crepe cooked side up on your work surface, and spoon about 1 1/2 tablespoons of cheese filling about 1 1/2 inches from the top edge.

  10. 10

Fold the top edge of the crepe over the filling, fold the two sides inward to enclose the cheese, then roll up to seal, forming a compact filled roll.

  11. 11

Melt 1 teaspoon of butter, or as needed, in a skillet over medium-low heat.

  12. 12

Pan-fry the blintzes on both sides until the filling is hot and brown spots appear on the crepe, 1 to 2 minutes per side.
