Lemony Herb-Baked Mediterranean Cod features flaky fillets infused with fresh garlic, parsley, oregano, and a touch of paprika, all melting into a rich butter sauce. Lemony Herb-Baked Mediterranean Cod

    Preheat the oven to 400 degrees F (200 degrees C).

    On a cutting board, place the softened butter, minced garlic, parsley, oregano, and thyme or rosemary. Using a sharp knife, chop the herbs and garlic together with the butter, cutting and mixing as you go. Add pink salt, black pepper, and paprika, and mix until well combined.

    Pat the cod filets dry. In a 12x18-inch casserole or baking pan, set each filet on top of 2 lemon slices. Evenly portion the herb butter mixture over the filets; use a fork or offset spatula to spread the herb butter over the filets. Place the remaining 2 lemon slices on top of each filet.

    Bake in the preheated oven for 13 to 15 minutes, until the cod flakes easily with a fork. See note.

    To serve, drizzle each filet with extra virgin olive oil and garnish with fresh parsley, if desired.
