Nicole’s Puff-Pastry Salmon with Spinach and Feta

Flaky puff pastry encases tender salmon with a creamy spinach, cream cheese, and feta layer for rich, lemony bites in every slice. Nicole’s Puff-Pastry Salmon with Spinach and Feta feels special enough for holidays or date night, yet it’s comforting and crowd-pleasing for a weekend dinner. Fresh dill and citrus zest lift the savory filling while the pastry bakes crisp and golden.

  1. 1

Heat a large nonstick skillet over medium-high heat. Add the onion and cook until softened, about 2 minutes. Add the spinach, garlic powder, and half of the salt and pepper; cook, stirring constantly, for about 3 minutes. Stir in the cream cheese until melted, then remove from the heat. Stir in the feta cheese, dill, lemon juice, and lemon zest. Set aside.

  2. 2

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment.

  3. 3

Roll 1 piece of puff pastry on a lightly floured surface to just slightly larger than the salmon fillet. Spread half of the spinach mixture over the pastry in the shape of the salmon fillet. Place the salmon on top of the spinach mixture and sprinkle with the remaining salt and pepper. Spoon the remaining spinach mixture over the salmon and place the second pastry sheet on top. Trim any excess pastry from the edges; fold the pastry edges all around the salmon to seal.

  4. 4

Transfer the salmon to the prepared baking sheet; brush evenly with the egg.

  5. 5

Bake in the preheated oven until golden brown and the fish is cooked through, about 30 minutes. An instant-read thermometer inserted into the center of the salmon should register 145 degrees F (63 degrees C). Let stand for 5 minutes before serving.
