Spicy No-Sugar Refrigerator Dill Pickles

These Spicy No-Sugar Refrigerator Dill Pickles pack a crisp snap with layered heat from peppercorns, red pepper flakes, and both yellow and brown mustard seeds. Fresh dill and a hint of garlic round out the briny bite, letting the cucumbers shine without sweetness. Perfect for burgers, sandwiches, or snack boards when you want bold, chilled crunch.

  1. 1

In a saucepan over medium heat, combine water, vinegar, salt, peppercorns, yellow and brown mustard seeds, sugar, and red pepper flakes; cook until the salt and sugar dissolve, 5 to 7 minutes. Let cool for about 30 minutes.

  2. 2

Cut cucumbers into evenly sized spears; pack them into a 1-liter, wide-mouthed glass jar. Add the onion slices, dill sprigs, and garlic. Pour in the cooled vinegar mixture to fully cover the cucumbers; seal with a lid. Refrigerate for 24 hours before serving.
