Place the peeled and quartered potatoes in a saucepan. Cover them with cold water by at least 1 inch. Season with salt and the garlic, then bring to a boil over medium-high heat.

Lower the heat to medium-low and simmer gently until the potatoes are very soft, about 25 minutes. Drain the potatoes and return them to the pot or transfer to a bowl.
