Preheat the oven to 425 degrees F (220 degrees C).

In a bowl, whisk together the lemon juice, lemon zest, olive oil, oregano, garlic powder, 2 teaspoon salt, and 1/2 teaspoon pepper until well blended.

Slice the chicken in half lengthwise and lightly pound to an even thickness (or use 6 chicken cutlets), then place the chicken in a shallow dish or large resealable bag. Pour half of the olive oil mixture over the chicken and toss to coat well. Let the chicken marinate for 30 minutes while you prepare the potatoes.

Toss the potatoes with the remaining marinade. Transfer the potatoes to a lightly greased 9x13 baking dish and season with the remaining salt and pepper.

Bake in the preheated oven for 25 to 30 minutes, tossing halfway through, until the potatoes are just tender.

Meanwhile, cook the green beans according to the microwave package directions.

Remove the potatoes from the oven and toss the green beans with the potatoes. Dot the top with half of the softened butter. Remove the chicken from the marinade and place it on top of the potatoes and green beans. Reserve any marinade left in the bowl.

Add the remaining butter, mayonnaise, and Parmesan cheese to the bowl with any leftover marinade and mix well. Spread the butter mixture evenly over the chicken and return the pan to the oven.

Bake in the preheated oven for 20 to 25 minutes, until the chicken is cooked through. For a browned top, broil on high for the last 2 minutes. Sprinkle with parsley if you like.
