    Mix the jerk seasoning, salt, and black pepper in a small bowl; set the rub aside.

    Heat the oil in a large skillet over medium heat; add about 1 tablespoon of the jerk rub. Add the onion; cook and stir until softened, about 3 minutes.

    Meanwhile, sprinkle 1/2 of the remaining jerk rub onto one side of each pork chop. Using the tip of a knife, poke 4 or 5 holes into each chop; drizzle 1/2 of the lime juice over the top. Place the chops, seasoned sides down, into the hot skillet.

    Cook until browned, 5 to 7 minutes.

    While the chops cook, sprinkle the remaining jerk rub onto the top sides of the chops; poke 4 or 5 holes into each chop using the tip of a knife. Drizzle the remaining lime juice over the top.

    Flip the chops; cook until browned and no longer pink in the centers, 5 to 7 minutes more. An instant-read thermometer inserted into the centers should read 145 degrees F (63 degrees C).
