Citrus-Kissed Jerk Grilled Chicken

Citrus-Kissed Jerk Grilled Chicken balances bright lemon, lime, and orange with the warm heat of jerk spices, yielding juicy, lightly charred breast meat. The zippy marinade lifts the savory notes and keeps the chicken tender on the grill. Serve for a sunny weeknight dinner or a backyard cookout alongside rice, grilled veggies, or a crisp slaw.

Citrus-Kissed Jerk Grilled Chicken
  1. 1

In a resealable plastic bag, combine 3 tablespoons jerk seasoning, oil, lemon juice, lime juice, and orange juice.

  2. 2

Place the chicken on a flat work surface. Slice horizontally through the center, taking care not to cut all the way through. Open the two sides and lay them flat like an open book.

  3. 3

Sprinkle the butterflied chicken breasts with the remaining 1 tablespoon jerk seasoning and add the chicken to the marinade. Seal and refrigerate for about 1 hour. Remove from the fridge about 10 minutes before grilling.

  4. 4

Preheat a gas grill to 500 degrees F (260 degrees C) and lightly oil the grate. Add the chicken and grill until the center is no longer pink and the juices run clear, 4 to 5 minutes per side. Serve hot.
