Bring the water and rice to a boil in a saucepan. Lower the heat to medium-low, cover, and simmer until the rice is tender and the water is absorbed, 20 to 25 minutes. Keep warm.

Preheat the oven to 450 degrees F (230 degrees C).

Toss the cubed sweet potatoes with 1 tablespoon oil. Spread them out evenly on a baking sheet.

Roast the sweet potatoes in the preheated oven until tender but still slightly firm, 15 to 20 minutes.
