    Combine the salmon, eggs, and onion in a bowl. Season with cayenne and salt, then mix well. Put the fish fry in a separate bowl.

    Heat the oil in a skillet over medium-high heat.

    While the oil heats, scoop a large spoonful of the salmon mixture into your palm and shape it into an oval croquette patty. Place the croquettes in the fish fry and flip to coat. Repeat to form the remaining croquettes.

    Working in batches, add the croquettes to the hot oil and cook until the edges are browned, about 5 minutes. Flip and cook the other side for about 5 minutes. Transfer to a paper towel-lined platter and repeat with the remaining batches.
