Parchment Baked Salmon

Parchment Baked Salmon

    Preheat the oven to 400 degrees F (200 degrees C). Position an oven rack on the lowest level.

    Set the salmon fillet, skin-side down, in the center of a large sheet of parchment paper; season with salt and black pepper. Using a sharp knife, make two 3-inch slits in the fillet. Tuck the chopped basil leaves into the slits. Spray the fillet with cooking spray and lay the lemon slices on top.

    Fold the parchment paper edges over the fillet several times to seal it into an airtight packet. Set the sealed packet on a baking sheet.

    Bake in the preheated oven on the bottom rack until the salmon flakes easily and the flesh is pink and opaque with a slightly darker pink center, about 25 minutes. An instant-read thermometer inserted into the thickest part of the fillet should register at least 145 degrees F (65 degrees C). To serve, cut open the parchment paper and remove the lemon slices before plating.
