Preheat the oven to 375 degrees F (190 degrees C). Season the pork with salt and black pepper.

Heat the oil in an ovenproof skillet over high heat. Add the pork and cook until browned on one side, 3 to 4 minutes. Flip the pork, then transfer the skillet to the preheated oven. Cook until the pork is browned and still slightly pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should register at least 145 degrees F (63 degrees C). Transfer the pork to a plate.

Pour off any excess oil from the skillet. Set the skillet over medium-high heat. Add the chicken broth and bring to a boil, scraping up any browned bits from the bottom of the skillet. Whisk in the cream, horseradish, Dijon mustard, and cayenne pepper, and continue to cook until reduced to a thick sauce, 3 to 4 minutes. Remove from the heat, whisk in the cold butter, then stir in the chives.
