    Warm the oil in a Dutch oven over medium heat. Add the carrots, zucchini, onion, poblano pepper, 1 tablespoon chili powder, 1 tablespoon cumin, and the smoked paprika. Cook until the onion is soft and translucent, 3 to 4 minutes.
