Roasted Potatoes with Bacon, Cheese, and Parsley

Roasted Potatoes with Bacon, Cheese, and Parsley

    Position an oven rack in the lower third of the oven and preheat to 450 degrees F (230 degrees C).

    Put the potatoes in a large pot, cover with cold water, and add salt. Bring to a boil; lower the heat to medium and simmer until the potatoes are just tender when pierced with a fork, about 12 minutes. Drain.

    Return the potatoes to the pot; cover with a lid and shake the pot vigorously, about 1 minute.

    Uncover and let the potatoes cool until easy to handle, about 10 minutes.

    Peel the potatoes and slice them crosswise into chunks.

    Place the bacon in a skillet and cook over medium-high heat, turning now and then, until most of the fat has rendered and the bacon is tender, 5 to 7 minutes. Drain the bacon on paper towels, keeping the bacon fat in the skillet.

    Brush the bottom of a shallow 10x15-inch baking pan with half of the bacon fat and the olive oil. Season the potatoes with salt and pepper and arrange them in the baking pan.

    Roast the potatoes in the preheated oven until the bottoms are golden brown, about 30 minutes. Remove the potatoes from the oven and lower the oven temperature to 375 degrees F (190 degrees C).

    Turn the potatoes over in the baking pan. Add the bacon pieces, Parmigiano-Reggiano cheese, and the garlic on top. Drizzle the remaining bacon fat over them.

    Return to the preheated oven and roast until the Parmigiano-Reggiano cheese has melted, about 15 minutes. Sprinkle with the parsley and serve.
