Roasted Potatoes with Bacon, Cheese, and Parsley
Golden-edged Yukon Gold potatoes are roasted until crisp, then finished with smoky bacon, nutty Parmigiano-Reggiano, and a sprinkle of fresh parsley. The garlic adds a savory lift, making this a hearty, crowd-friendly side with rich, salty notes and a bright herb finish. Serve Roasted Potatoes with Bacon, Cheese, and Parsley alongside roast meats or as a standout addition to any weekend dinner.

- 1
Position an oven rack in the lower third of the oven and preheat to 450 degrees F (230 degrees C).
- 2
Put the potatoes in a large pot, cover with cold water, and add salt. Bring to a boil; lower the heat to medium and simmer until the potatoes are just tender when pierced with a fork, about 12 minutes. Drain.
- 3
Return the potatoes to the pot; cover with a lid and shake the pot vigorously, about 1 minute.
- 4
Uncover and let the potatoes cool until easy to handle, about 10 minutes.
- 5
Peel the potatoes and slice them crosswise into chunks.
- 6
Place the bacon in a skillet and cook over medium-high heat, turning now and then, until most of the fat has rendered and the bacon is tender, 5 to 7 minutes. Drain the bacon on paper towels, keeping the bacon fat in the skillet.
- 7
Brush the bottom of a shallow 10x15-inch baking pan with half of the bacon fat and the olive oil. Season the potatoes with salt and pepper and arrange them in the baking pan.
- 8
Roast the potatoes in the preheated oven until the bottoms are golden brown, about 30 minutes. Remove the potatoes from the oven and lower the oven temperature to 375 degrees F (190 degrees C).
- 9
Turn the potatoes over in the baking pan. Add the bacon pieces, Parmigiano-Reggiano cheese, and the garlic on top. Drizzle the remaining bacon fat over them.
- 10
Return to the preheated oven and roast until the Parmigiano-Reggiano cheese has melted, about 15 minutes. Sprinkle with the parsley and serve.
