- 1
Preheat the oven to 400 degrees F (200 degrees C). Trim 1/4 to 1/2 inch from the stem end of each onion; trim off the roots, keeping the root end intact. Peel off and discard the papery outer layer.
- 2
Slice each onion in half horizontally. Use a melon baller or paring knife to hollow out each half to make a bowl, leaving at least 3 layers of onion around the edges so it holds its shape while cooking. Reserve the scooped-out onion.
- 3
Set the onions on a rimmed baking sheet. Drizzle with olive oil, then season with salt and pepper.
- 4
Roast the onions in the preheated oven until as tender as you like, 30 to 40 minutes.
- 5
Meanwhile, chop the reserved onion. Melt butter in a skillet over medium-high heat. Add the chopped onion and cook for 5 minutes. Reduce the heat to medium and cook until the onion is deeply browned, about 10 minutes more. Turn off the heat and let cool slightly.
- 6
Add Italian sausage, the caramelized onions, parsley, thyme, garlic, 1/4 cup Parmesan cheese, and panko to a large bowl. Mix well and shape into 6 balls. Place the balls into the onion halves. Pour the chicken broth and wine into the bottom of the baking dish.
- 7
Return to the oven for 15 minutes. Sprinkle the remaining Parmesan cheese on top. Bake until the cheese is golden and the sausage is no longer pink, about 15 minutes more. An instant-read thermometer inserted near the center should register 160 degrees F (70 degrees C).

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
