    In a shallow dish, mix roasted red peppers, cilantro, lime juice, and chili powder. Add the chopped shrimp and toss in the lime mixture. Refrigerate to chill.

    Meanwhile, heat a skillet over medium heat and add olive oil. Sauté the onion in the hot oil until tender and translucent, about 5 minutes. Stir in the shrimp and lime mixture and sauté until the shrimp turn pink and are cooked through, about 3 minutes. Take the mixture out of the skillet.

    Assemble the quesadillas by layering the shrimp mixture and Mexican cheese between 2 tortillas.
