Citrus-Lime Chicken Quesadillas

    Preheat the oven to 350 degrees F (175 degrees C).

    In a large bowl, stir together the margarita mix, lemon juice, lime juice, and garlic powder.

    Heat the vegetable oil in a large skillet over medium heat. Cook and stir the chicken in the hot oil until it is no longer pink in the center and the juices run clear, 5 to 7 minutes. Drain any excess oil from the chicken. Pour the margarita mixture into the skillet with the chicken; simmer until most of the mixture has evaporated, 15 to 20 minutes. Transfer the chicken to a paper towel-lined plate and drain.

    Layer 4 tortillas with the chicken, Cheddar cheese, and Monterey Jack cheese; top with the remaining 4 tortillas. Place the prepared quesadillas, 1 or 2 at a time, on a large baking sheet.

    Bake the quesadillas in the preheated oven until the cheese is melted, about 15 minutes. Repeat with the remaining quesadillas; cut into quarters to serve.
