Texas Chicken Quesadillas

    Preheat the oven to 350 degrees F (175 degrees C).

    In a large, deep skillet, heat 1 tablespoon oil over medium-high heat. Cook the onion slowly, stirring, until translucent. Mix in the honey and stir until the onion is golden brown, about 5 minutes. Remove from the skillet and set aside.

    Add the remaining oil and the chicken to the skillet over medium-high heat. Cook until the chicken is no longer pink. Stir in the barbeque sauce and coat the chicken evenly.

    Layer 4 tortillas individually with the chicken, the onions, the Cheddar cheese, and the Monterey Jack cheese. Top with the remaining tortillas.

    Place one or two layered tortillas at a time on a large baking sheet. Bake uncovered in the preheated oven for 20 minutes, or until the cheese is melted. Do not let the tortillas become too crisp. Remove from the oven and cut into quarters to serve.
