Pan-Braised Brussels Sprouts with Bacon
  1. 1

Cook the bacon in a large cast iron skillet over medium heat until just crisp, 5 to 7 minutes. Move it to a paper towel-lined plate, keeping the bacon grease in the skillet.

  2. 2

Set the Brussels sprouts in the skillet cut-side down. Raise the heat to medium-high and sauté in the bacon grease until lightly browned, 2 to 3 minutes.

  3. 3

Add the garlic and sauté until fragrant, about 30 seconds.

  4. 4

Pour in the chicken stock and cover the skillet with a lid; simmer until the Brussels sprouts are bright green, 3 to 5 minutes. Take off the lid and continue simmering until the liquid evaporates and the sprouts reach the desired tenderness, 3 to 5 more minutes.

  5. 5

Take the skillet off the heat. Add the bacon, butter, balsamic vinegar, salt, and pepper; stir until the butter melts.
