Add half of the beef and cook, turning frequently, until browned on all sides, about 6 minutes (avoid overcrowding the skillet for good browning). Repeat with the remaining beef, using any oil left in the skillet. (Do not wipe the skillet.) Transfer the browned beef to an ungreased 6-quart slow cooker.

After all the beef is browned, reduce the heat to medium and add the curry paste, stirring to loosen any browned bits in the skillet. Add the beef broth and coconut cream, stirring to combine. Pour this mixture over the beef in the slow cooker. Add the potatoes; cover and cook on HIGH for 4 hours or on LOW for 6 hours, or until the beef is very tender when pierced with a fork.

Remove the beef and potatoes to a large bowl, then carefully pour the liquid from the slow cooker into a heatproof glass measuring cup or bowl and let it stand until the fat rises to the top, about 2 minutes. Skim off the fat from the surface with a ladle and discard.
