Slow Cooker Salsa Chicken

Slow Cooker Salsa Chicken turns tender, shreddable chicken into a bold, saucy filling layered with tomatoes, habanero heat, and fresh vegetables. It’s juicy, well-spiced, and perfect for stuffing into tacos and burritos or spooning over rice for an easy weeknight meal. Expect a savory, slightly spicy bite with plenty of moisture and depth from slow simmering.

Slow Cooker Salsa Chicken
  1. 1

Place the chicken in the crock of a slow cooker. Sprinkle taco seasoning over the chicken. Layer the diced tomatoes with habaneros, onion, celery, and carrot over the chicken in that order; finish with the salsa on top. Pour water over the whole mixture.

  2. 2

Cook on Low until the chicken shreds easily, 6 to 8 hours. An instant-read thermometer should show 165 degrees F (74 degrees C).

  3. 3

Shred the chicken with 2 forks and stir it into the salsa mixture.
