Smoked Zucchini and Squash

Smoked Zucchini and Squash pairs tender zucchini, yellow squash, cherry tomatoes, and spring onions with a tangy Italian marinade, then slow-smokes them until softly charred and aromatic. Smoked Zucchini and Squash

    Combine Italian dressing, yellow squash, zucchini, cherry tomatoes, and spring onions in a large bowl. Cover with plastic wrap and marinate in the refrigerator for 2 hours.

    Set a vegetable tray in a smoker and heat to 250 degrees F (121 degrees C) following the manufacturer's directions. Add wood chips.

    Move the marinated vegetables to the tray, keeping the excess dressing in the bowl.
