    Preheat the oven to 425 degrees F (220 degrees C) and line a rimmed baking sheet with parchment paper or foil.

    Combine yellow squash, zucchini, bell pepper, and red onion pieces in a large bowl. Pour 3 tablespoons olive oil over the vegetables and stir. Sprinkle with 2 tablespoons za’atar and stir to coat evenly. Season with salt and pepper. Spread the vegetables on the prepared sheet pan.

    Pat the chicken dry with paper towels, drizzle the remaining olive oil over both sides, and sprinkle the remaining za’atar on both sides of the chicken. Season the chicken with salt and pepper. Nestle the chicken pieces into the vegetables.

    Bake on the center rack of the preheated oven for 20 minutes. Add the cherry tomatoes; bake until the chicken is no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center of the chicken should read 165 degrees F (74 degrees C).

    To serve, transfer the chicken and vegetables to a serving plate and garnish with fresh chopped parsley.
