Herbed Spring Popovers

    Preheat the oven to 425 degrees F. Brush a 12-cup popover pan with 1 tablespoon melted olive oil butter. Place the pan in the oven to heat for 5 minutes.

    Meanwhile, in a bowl, combine the remaining 3 tablespoons olive oil butter, flour, milk, eggs, chives, dill, and salt; mix well.

    Pour the batter into the preheated, prepared popover cups, filling each about halfway.

    Bake in the preheated oven for 25 minutes. Do not open the oven door while baking.

    Remove from the oven and poke the top of each popover with a sharp knife to release steam. Serve warm with canola oil butter.
