Beer-and-Vinegar Steamed Blue Crabs

Beer-and-Vinegar Steamed Blue Crabs yield tender, naturally sweet crab meat perfumed by a briny blend of beer, white vinegar, and Old Bay. The spice crust clings to the shells, giving each crack and dip a punchy, coastal flavor that’s perfect for summer gatherings, crab feasts, or a laid-back weekend dinner with newspaper-lined tables and plenty of napkins.

  1. 1

In a large stockpot over high heat, combine the beer, vinegar, 1/2 cup seafood seasoning, and salt; bring to a vigorous simmer.

  2. 2

Right before cooking, carefully turn each crab upside down and insert a knife through the shell just behind the mouth.

  3. 3

Place a screen over the simmering beer mixture; arrange the crabs in layers on the screen.

  4. 4

Cover the pot; steam the crabs until they are bright orange with no blue-green color remaining, 20 to 30 minutes. Sprinkle the crabs with the remaining 1/4 cup seafood seasoning before serving.
