Assemble all the ingredients.

Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-by-13-inch baking dish. Spread the hash browns evenly over the bottom of the baking dish.

Heat olive oil in a large skillet over medium heat. Add the chorizo and the onion, breaking up the meat into smaller pieces with a flat wooden spoon. Cook until browned, about 8 to 10 minutes. Set aside.

In a large bowl, whisk the eggs, 2 cups Cheddar cheese, 1 cup sour cream, milk, salt, and pepper. Stir in the chorizo mixture.
