Pan-Fried Trout with Almonds (Amandine)

    Rinse the trout and pat it dry. Season the inside and outside with salt and pepper to taste. Coat the trout in flour.

    Melt 2 tablespoons butter in a large skillet over high heat. Add the trout and brown it on both sides. Reduce the heat to medium and cook for about 5 minutes per side, or until cooked through. Transfer the trout to a serving plate and keep it warm.

    Wipe out the pan and add 2 tablespoons butter. Cook the butter over medium heat until it just starts to brown. Add the almonds and brown them.
