Wash the potatoes and pierce the skins all over with a fork.

Microwave the potatoes for 5 minutes per side. Remove from the microwave and slice them in half lengthwise. Using a small spoon, scoop out the centers, leaving 1/4 inch of potato flesh in each shell.

Preheat the air fryer to 350 degrees F (175 degrees C). Lightly spray the insides of the potato shells with olive oil cooking spray. Place the potatoes in the air fryer basket, hollow side facing up.
