    Gently heat the olive oil and garlic in a small saucepan over low heat for 5 minutes to infuse the olive oil with garlic flavor. Put the bread crumbs in a mixing bowl and pour the oil mixture over them. Stir in the parsley and Parmesan cheese until evenly combined with the bread crumbs. Press the venison cubes into the bread crumb mixture to coat, then arrange them on the prepared baking sheet. Ensure the venison pieces are not touching.
