    Make the dipping sauce: Stir together yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne in a small bowl. Refrigerate until needed.

    Make the Scotch eggs: Divide the pork sausage into 6 equal portions. Press each portion into a thin patty. Set 1 hard-boiled egg in the center of each patty and wrap the sausage around the egg, sealing all sides. Set aside.

    Preheat the air fryer to 390 degrees F (200 degrees C).

    Put flour in a small bowl, beaten eggs in another small bowl, and panko on a plate. Dredge each sausage-wrapped egg in flour, then dip into the beaten egg, letting the excess drip off. Roll in panko and set on a plate.

    Spray the air fryer basket with cooking spray. Arrange the eggs in the basket in a single layer without crowding; cook in batches if needed. Air-fry for 12 minutes in the preheated air fryer, turning the eggs halfway through. Repeat with the remaining eggs.
