Make the dipping sauce: Stir together yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne in a small bowl. Refrigerate until needed.

Make the Scotch eggs: Divide the pork sausage into 6 equal portions. Press each portion into a thin patty. Set 1 hard-boiled egg in the center of each patty and wrap the sausage around the egg, sealing all sides. Set aside.
