    Rinse and dry the peppers, then slice them in half from top to bottom. Remove the seeds and white membranes, and trim off the stems.

    Brush the outside of each pepper half with olive oil and set them on a work surface, cut side up; lightly sprinkle the insides with salt, about 1/4 teaspoon total.

    In a large bowl, mix the egg, ketchup, Italian seasoning, red pepper flakes, black pepper, and the remaining 1/2 teaspoon salt. Beat vigorously with a fork or small whisk until well combined.

    Add the ground turkey, cooked rice, minced onion, and minced garlic to the bowl. With clean hands, mix until the ingredients are evenly combined.

    Portion the turkey mixture evenly into the prepared bell pepper halves, then spray the tops with olive oil spray.

    Preheat an air fryer to 350 degrees F (180 degrees C), if your manufacturer recommends preheating. Air fry for about 15 minutes. Sprinkle the tops of the peppers evenly with mozzarella and air fry until the cheese melts, about 5 minutes more. The peppers are done when an instant-read thermometer inserted near the center reads 165 degrees F (74 degrees C).
