Beer-Marinated Venison (Deer/Elk/Moose) Steaks

Beer-Marinated Venison (Deer/Elk/Moose) Steaks balance rich, game-forward meat with a malty amber beer, soy, and Dijon for a deep, savory-salty bite and gentle heat. The marinade mellows gaminess while boosting umami, yielding tender, juicy steaks with a subtle tang. Ideal for a hearty weeknight dinner or a weekend cookout when you want big flavor with minimal fuss.

Beer-Marinated Venison (Deer/Elk/Moose) Steaks
  1. 1

Whisk the beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl, then pour the mixture into a resealable plastic bag. Add the venison steaks, coat them with the marinade, press out the excess air, and seal the bag. Marinate in the refrigerator for 2 days.

  2. 2

Preheat an outdoor grill to high heat and lightly oil the grate. Remove the steaks from the marinade and shake off the excess. Discard the remaining marinade.

  3. 3

Grill the steaks on the preheated grill until they begin to firm and are hot with a slightly pink center, about 7 minutes per side. An instant-read thermometer inserted into the center should register 140 degrees F (60 degrees C). Let the steaks rest for 5 minutes before serving.
