Buttermilk Parmesan Potatoes
  1. 1

Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.

  2. 2

Melt 1 tablespoon butter in a saucepan over medium heat. Add the onion and the garlic; cook, stirring, until the onion is translucent, about 5 minutes. Stir in the remaining 3 tablespoons butter until melted. Sprinkle the flour, salt, and pepper over the onion mixture; cook and stir until it bubbles and thickens, about 2 minutes. Gradually whisk in the milk and the buttermilk, and bring the mixture back to a boil. Stir in 3/4 cup Parmesan cheese; cook until melted and smooth, about 2 minutes.

  3. 3

Arrange the potatoes in an even layer over the bottom of the prepared baking dish. Pour the sauce over the potatoes, and stir to coat evenly.

  4. 4

Bake in the preheated oven for 1 hour, stirring halfway through. Stir again, top with the remaining 1/4 cup Parmesan, and bake until the cheese is melted and golden brown, about 20 more minutes.
