Build a campfire and let it burn until a bed of coals forms. Rake the coals into a flat layer on one side of the fire.

Cut 2 pieces of heavy-duty aluminum foil about 18 inches square and stack them for extra strength. Spray the top sheet with nonstick spray.

Spread potatoes on the prepared foil, leaving enough space to fold it later. Scatter onion over the potatoes, then slice margarine over the potatoes. Layer Parmesan, mozzarella, and Cheddar cheeses on top. Season with salt and pepper. Bring the opposite edges of the foil together and seal.
