Using a slotted spoon, transfer the meat to a plate. Bring the stew to a boil and cook, skimming off the fat, until the stew is reduced and thick, 10 to 12 minutes.

Remove the meat from the bones; discard the bones and any pieces of fat. Stir the meat back into the stew. Stir in the green onions and season with salt and pepper to taste.
