Chicken and Pumpkin Goulash

Set the slow cooker to High, add the diced tomatoes and brown sugar to the cooker, and stir to combine.

Heat olive oil in a non-stick skillet over medium-high heat, and cook and stir the onion until lightly browned, about 10 minutes. Stir in the ginger, cinnamon, cumin, and coriander, and cook and stir until the spices are fragrant, about 2 minutes. Add the chicken, and cook and stir until the chicken is no longer pink. Stir in the garbanzo beans and bring the mixture to a simmer. Transfer the mixture to the slow cooker and stir it together with the tomatoes.

Add the pumpkin to the same skillet and reduce the heat to medium. Cook, stirring often, until the pumpkin is hot and some pieces are slightly browned, about 10 minutes. Transfer the pumpkin to the cooker and cover.

Cook the stew on High for 1 hour; then reduce the slow cooker to Low and cook until the pumpkin is tender, 3 to 4 more hours. Season with salt and black pepper. If the stew seems too liquid, mix cornstarch with water in a small cup until smooth, then stir the slurry into the stew. Cook until thickened, about 30 minutes.
