- 1
Assemble all the ingredients.
- 2
Set the chicken breasts between two sheets of plastic wrap, or inside a cut-open zip-top bag, and pound with a meat mallet until about 1/4 inch thick.
- 3
Season both sides of the chicken with salt, pepper, and cayenne, then move to a large plate. Sift flour over both sides until fully coated. Transfer to a clean plate.
- 4
Brush any extra flour off the plate. Sprinkle about 1/4 inch of panko over the surface of the plate.
- 5
Pour the egg over the floured chicken and use a brush to coat the meat evenly. Flip and repeat on the other side. After the chicken is well coated with egg, lift each piece with tongs, let the excess drip off, and place it on the panko-lined plate.
- 6
Generously sprinkle panko over the top of the chicken and press it in with your hands or tongs. Flip the chicken, sprinkle more panko on top, and repeat until the chicken is fully breaded all over.
- 7
Lightly sprinkle the Parmigiano-Reggiano over the top of the chicken and press it into the breading. Flip and repeat on the other side.
- 8
Move the chicken to a plate dusted with more panko. Cover with plastic wrap and refrigerate until ready to pan-fry.
- 9
For the sauce, melt butter in a saucepan over high heat; add the mushrooms and a large pinch of salt. Cook, stirring occasionally, until well browned, 5 to 6 minutes.
- 10
Lower the heat to medium and stir in the flour. Cook, stirring occasionally, for another 2 minutes.
- 11
Add the Marsala and lemon juice and scrape up any browned bits from the bottom of the pan. Pour in the chicken broth and increase heat to medium-high. Season with black pepper and cayenne and bring to a simmer. Cook, stirring occasionally, until slightly reduced and thickened. Keep hot until needed or let cool and reheat when needed. Before serving, you can stir in some freshly chopped parsley.
- 12
Heat olive oil in a nonstick skillet over medium-high. Add the breaded chicken and reduce heat to medium. Cook until golden brown and cooked through, about 3 minutes per side.
- 13
Serve right away with the Marsala sauce underneath or spooned on top.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
