Traditional Swiss Cheese Fondue

    Combine Gruyère cheese, Emmental cheese, and cornstarch in a bowl, mixing until the cheese is evenly coated; set aside.

    Rub the cut side of the garlic over the inside of a fondue pot or heavy saucepan. Add wine and set over medium heat. Bring to a simmer, then slowly add the cheese and cornstarch mixture. Stir with a spatula in a gentle figure-eight motion until all the cheese is incorporated and the fondue is smooth and uniform. Lower the heat to medium-low if the fondue boils too hard.

    Serve the fondue right away, preferably over a warmer. If you heated the fondue in a saucepan on the stove, you can carefully pour it into a fondue pot for serving.
