Cottage Cheese Pizza

Cottage Cheese Pizza features a no-knead blender dough that bakes up tender and pleasantly chewy, with a subtle tang and extra protein from cottage cheese. Topped simply with sauce and melty mozzarella, it’s a quick weeknight pie that goes from blender to table in under half an hour—perfect for a light dinner or shared lunch.

  1. 1

    Preheat a convection oven to 400 degrees F (200 degrees C).

  2. 2

Add cottage cheese to a high-powered blender, such as a Vitamix, and blend on High for 15 to 20 seconds.

  3. 3

Add in flour, Italian seasoning, and Parmesan cheese, then pulse on High in 5-second bursts until a shaggy dough forms.

  4. 4

Add 1 teaspoon oil to each of 2 small pizza pans.

  5. 5

Divide the dough evenly in half and roll out each piece to fit the pans.

  6. 6

Place the dough into the tins and use a fork to poke holes all over the pizza dough.

  7. 7

Bake the pizza crusts in the preheated oven for 6 minutes.

  8. 8

Remove from the oven and spread pizza sauce to within 1/2 inch of the crust edge, then sprinkle with cheese.

  9. 9

Return the pizzas to the oven and bake until the cheese is melted and golden, about 7 minutes.

  10. 10

Remove from the oven and let rest for about 2 minutes before cutting.

  11. 11

Cook’s Note: The dough weighs about 10 ounces total; you can make 1 larger pizza instead of 2 smaller pizzas.

  12. 12

Cook’s Note: Add any additional toppings you like on pizza.

  13. 13

Cook’s Note: If you are not baking with convection, you may need to increase the oven temperature to 425 degrees F (220 degrees C) and adjust the time.
