    Preheat the oven to 400 degrees F (200 degrees C). Lightly grease 2 baking sheets or line them with parchment paper.

    Mix Monterey Jack cheese, Parmesan cheese, green onion, garlic, seasoned salt, paprika, and red pepper flakes in a bowl. Gently fold in the drained crabmeat.

    Unfold the pastry sheet on a lightly floured surface. Brush it with some of the beaten egg white. Spread the crab mixture on top. Roll it up from the short side like a jelly roll. Slice into 1/2-inch pieces. Arrange the slices cut-side down on the prepared baking sheets. Brush with the remaining egg white.
