Add the shortening and cold butter, then pulse until combined and the mixture looks like coarse crumbs. Add ice water 1 tablespoon at a time, pulsing after each addition, until the mixture comes together (See Note). Wrap in plastic and refrigerate until needed, or for up to 24 hours.

    For the filling, melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the chicken, onion, celery, carrots, and curry powder; cook, stirring occasionally, until the onion softens, about 10 minutes. An instant-read thermometer inserted into the thickest parts of the chicken should read 165 degrees F (74 degrees C). Reduce the heat to medium; add the flour and cook, stirring frequently, about 3 minutes more. Gradually stir in the broth and yogurt; simmer until thickened, about 5 minutes. Remove from the heat. Stir in the apple, cilantro, salt, pepper, and thyme.

    Preheat the oven to 400 degrees F (200 degrees C).

    To assemble the pie, lightly flour a surface, unwrap the dough, and roll it out to about 1/8-inch thick. Use 2 1/2- to 3-inch cookie cutters to cut shapes from the dough. Arrange the shapes over the filling, overlapping as needed to cover it. Brush the egg over the dough shapes.

    Bake in the preheated oven until the pastry is golden brown and the filling is bubbly, about 30 minutes. Let cool at least 15 minutes before serving. Garnish with more cilantro.
