In a large mixing bowl, combine the ground beef, barbecue sauce, garlic powder, black pepper, and salt with your hands. Form a small handful at a time (about 1/4 pound) into 12 thin patties. Arrange the patties on a cookie sheet, cover with plastic wrap, and refrigerate.
- 2
Put the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Lift the bacon out with a slotted spoon and drain on paper towels. Lower the heat to medium and cook the onions in the remaining bacon drippings until soft and just starting to brown. Combine the onions and bacon in a small bowl.
- 3
Preheat an outdoor grill to medium heat and lightly oil the grate.
- 4
Meanwhile, take the beef patties out of the refrigerator; top 6 patties with 1- 1/2 tablespoons of the bacon and onion mixture, then sprinkle with shredded cheese. Cover each with one of the remaining patties and press the edges to seal.
- 5
Grill the stuffed patties until the beef is no longer pink in the center, about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C). Serve on hamburger buns with the condiments of your choice.
