    Heat the oven to 375 degrees F (190 degrees C). Set a rack inside a roasting pan.

    Mix the salt, pepper, and garlic powder in a small cup.

    Set the room-temperature roast on the rack in the roasting pan with the fatty side facing up and the rib side down. Rub the seasoning over the roast.

    Roast in the preheated oven for 1 hour. Turn the oven off and keep the roast inside for 3 hours without opening the door.
