Bring to a boil over medium-high heat, then lower to medium-low, mashing the mixture with a potato masher every 15 minutes as it cooks; simmer until the pork is tender, at least 1 1/2 hours. Add water as needed to keep it from boiling dry. When you are ready to stop cooking, reduce the liquid as much as possible without letting it burn. Transfer to lidded containers.
