  1. 1

In a large skillet, warm the oil over medium-high heat. Cook the pork, breaking it up with a spoon, for about 10 minutes or until it is no longer pink. Drain off the fat.

  2. 2

Stir in the stock, onions, garlic, mushrooms, celery, salt, cinnamon, pepper, savory, and cloves; bring to a boil.

  3. 3

Lower the heat to medium-low. Simmer for 35 to 45 minutes, or until about 2 tablespoons of liquid remain.

  4. 4

Stir in the fresh bread crumbs and parsley. Taste and adjust the seasoning as desired. Cover and refrigerate until cold. The filling can be kept for up to one day.

  5. 5

Preheat the oven to 375 degrees F (190 degrees C).

  6. 6

Roll out the pastry to about 1/8 inch thick and fit it into the pie plate. Spoon the filling into the shell. Roll out the top pastry.

  7. 7

Moisten the rim of the pie shell with water. Place the top pastry over it, pressing the edges together to seal. Trim and flute the edge of the pastry.

  8. 8

Beat the egg with water and brush it over the top pastry. Cut steam vents in the top.

  9. 9

Bake in the preheated oven until the pastry is golden brown, about 45 minutes. Let cool for about 10 minutes before serving.
