    Check five 1/2-pint jars for cracks and make sure the rings fit correctly; discard any that are faulty. Keep the jars in simmering water until needed. Wash new lids and rings in warm, soapy water and rinse thoroughly.

    In a large saucepan over medium heat, combine the pumpkin puree, sugar, apple juice, ginger, cinnamon, nutmeg, and cloves, stirring until evenly mixed. Bring to a boil, then lower the heat and simmer uncovered, stirring often, until thickened, about 30 to 35 minutes. The pumpkin butter is done when dragging a spoon through it leaves a trail that doesn’t immediately fill in.

    Ladle the pumpkin butter into the hot, sterilized jars, leaving 1/4 inch headspace. Slide a thin spatula or knife around the inside to release air bubbles. Wipe the rims with a damp paper towel and fasten the lids tightly.
